Cupping Notes: Medium Acidity, Medium Body, Lemon, Lime, Milk Chocolate and Stone Fruit.  This is a very smooth, well balanced cup.

APROCASSI (the Asociación de Productores Cafetaleros Solidarios de San Ignacio) is a prominent coffee cooperative in the San Ignacio Province of northern Peru. Situated in the Cajamarca region, an area celebrated for its coffee cultivation, APROCASSI benefits from the high altitudes and diverse microclimates of the Andean mountains.

This group has done such a great job at producing both a clean tasting and ‘clean’ coffee that we had this lot tested for heavy metals, mycotoxins and Glyphosate and 500 other compounds including pesticides..  All came back negative making this a truly clean coffee.
